One of the great things about living in a state like Florida during a pandemic is that we could still be outdoors. Granted the last year was spent outdoors on my own lanai or in my own community alone or distanced from friends, family and even neighbors. But now many of us are vaccinated and emerging from the pandemic cocoon. After the year we have all had dining out at home with friends is so needed!
I always start with my table. Outdoor dining. I make a simple arrangement using supermarket sunflowers and assorted leaves and greens from my garden to create a simple arrangement of sunflowers and greens, For an additional pop I also place in the greens a few lemons for added color and springiness! I usually do this first to keep me excited and focused on creating a welcoming, beautiful dining atmosphere.
But as I have always said you always have to be prepared for Plan B. Today was growing just to hot to dine outdoors so Plan B – lift it all and move it indoors where the air is just a bit cooler. It’s still a beautiful Florida day to catch up on the past year but we need to be comfortable to do so.
As for dinner, we started with crab balls but (oops) we started eating them and I forgot to take a photo)! Next a light salad of arugula, parmesan cheese with a lemon vinaigrette.
Then broiled salmon fillet over grilled carrots and asparagus topped with an olive tapenade, That leaves plenty of room for a light dessert of berries topped Greek yogurt and honey.
Our journey hit a pause (ok, maybe more than a pause) but now the road looks like it is opening for the next adventure – after reconnecting with friends and family! Perfect! Bon Appetit!
